Chicken Fried Steak with Gravy

Chicken Fried Steak

Ingredients:

  • Cube steaks
  • 1 sleeve saltine crackers
  • ¾ cup White Lily self-rising flour
  • Black pepper
  • Salt
  • 2 eggs
  • Whole milk (get a gallon for both steak and gravy)
  • Cayenne pepper
  • Canola oil (for frying)

Steps:

  1. Cut cube steaks into single-size portions and season both sides with salt and pepper.
  2. Crush saltine crackers and combine with flour, black pepper, and cayenne in a bowl.
  3. In another bowl, whisk eggs and whole milk to create an egg wash (use enough milk until it resembles the color of butter).
  4. Heat canola oil in a skillet over medium-high heat. Dredge steaks in cracker-flour mix, then dip in egg wash, then coat again in cracker-flour mix.
  5. Fry on both sides until golden brown and crispy.

Country Gravy

Ingredients:

  • Whole milk
  • White Lily self-rising flour
  • ¼ cup butter
  • Drippings from meat or sausage
  • Salt & pepper to taste

Steps:

  1. In a skillet, melt butter and whisk in drippings from meat or sausage.
  2. Sprinkle in flour and whisk to form a roux.
  3. Gradually add whole milk, whisking constantly until smooth and thickened.
  4. Season with salt and pepper to taste. Serve hot over chicken fried steak.
