Pizza Party: Squid, Rosa, Carbonara & Zaza

Chef Brad Leone and comedian Steph Tolev stop by… so I crank up the pizza oven Brad gave me, and we have a feast. We’re all getting our hands dirty with squid pie, a kimchi Korean pie, and a Carbonara pizza I’ve been dying to try. Squid Pizza

Ingredients:

  • 1 pizza dough
  • ½ cup sliced squid tubes and tentacles, rinsed
  • 10 very thinly sliced lemon rounds
  • 10 very thinly sliced squash rounds
  • 2 TBSP EVOO
  • 1 TBSP chopped capers
  • 1-8 garlic cloves, thinly sliced
  • Salt and pepper
  • Grated parmesan
  • Hot honey
  • Basil

Steps:

  1. Place skillet in oven and preheat as hot as oven will go.
  2. Shape dough.
  3. Toss squid, lemon, squash, EVOO, capers, garlic, salt and pepper in a bowl until mixed.
  4. Dress dough with toppings, sprinkle with parmesan, and bake ~5 minutes until crust is cooked through.
  5. Drizzle pizza with hot honey and EVOO; top with basil, pepper, and more parmesan.

Pizza Rosa

Ingredients:

  • ½ cup Parmigiano Reggiano, coarsely grated
  • ¼ red onion, thinly sliced
  • ½ sprig fresh rosemary, leaves only
  • 1 heaping TBSP pistachios, coarsely chopped
  • EVOO
  • 1 pizza dough

Steps:

  1. Heat pizza oven.
  2. Dress red onion with EVOO and salt.
  3. Spread cheese over flattened dough. Top with onion and rosemary.
  4. Bake, then sprinkle with pistachios and return to oven. Finish with EVOO drizzle.
