LeeAnn’s Lasagna + Warm Marinated Olives

Venice-based band Strawberry Fuzz is out with a new album – and stops by the kitchen to talk about it. It’s a family-style Italian feast with warm, marinated olives and LeeAnn’s famous lasagna. We also have a heart-to-heart about who is actually famous around here.

Warm Marinated Olives

Ingredients:

  • 2 cups pitted green olives
  • 1¼ cup pitted black olives
  • 4 mashed garlic cloves
  • ½ orange zest
  • 1 lemon zested and juiced
  • 2 tsp fresh thyme, stems removed and chopped
  • 2 tsp whole fennel seeds
  • 1 tsp Aleppo pepper
  • ½ tsp black pepper
  • ⅔ cup EVOO

Steps:

  1. Add olives, garlic, orange zest, lemon zest and juice, thyme, fennel seeds, Aleppo pepper, black pepper, and EVOO to a bowl.
  2. Heat a pan over medium-low heat and add in the olive mixture. Once olives start to sizzle, lower heat and cook for another 3–4 minutes.

LeeAnn’s Lasagna

Ingredients:

  • 1 box lasagna noodles
  • 2 lbs ground beef
  • 1 lb Jimmy Dean’s spicy sausage
  • 28 oz whole peeled tomatoes
  • 2 small cans tomato paste
  • Garlic, chopped
  • Salt and pepper
  • Red onion, chopped
  • 2 containers ricotta cheese
  • 2 eggs
  • 1 cup parmesan cheese
  • Fresh parsley, chopped
  • Shredded mozzarella

Steps:

  1. Preheat oven to 350°F. Cook lasagna noodles according to package instructions.
  2. Sauté garlic and onion in EVOO. Add beef and sausage and cook until browned.
  3. Add tomatoes, salt, and tomato paste. Mix and bring to a simmer.
  4. In a separate bowl, mix ricotta, eggs, parmesan, and parsley.
  5. In a baking dish, layer EVOO, a thin layer of sauce, noodles, meat sauce, cheese mixture, and repeat. Top with mozzarella.
  6. Bake for 1 hour at 350°F.
