Black Bean Mole
Ingredients:
- ½ lb crumbled chorizo
- 1 cup chopped onion
- 1 cup chopped sweet red pepper
- Garlic cloves
- 1 can black beans
- 1 can pinto beans
- 1 can black-eyed peas
- 1½ cups tomatillo salsa
- 1 cup chili sauce
- 2 tbsp honey
- 1 tbsp instant coffee granules
- 1 tsp cinnamon
- 3 oz semi-sweet chocolate
- Queso fresco
- Avocado
- Tortillas
Steps:
- Preheat oven to 375°F.
- In large skillet, cook chorizo, onion, red pepper, and garlic over medium heat until chorizo is browned.
- Add remaining ingredients and mix well.
- Bake uncovered for 40 minutes.
- Sprinkle with queso fresco and serve with avocado and warmed tortillas.
Street Corn Fritters
Ingredients:
- 3 cups frozen corn kernels, defrosted
- ½ cup diced red onion
- 1 diced jalapeño
- ½ cup finely minced cilantro
- 1 cup shredded cotija/chihuahua cheese
- 1 cup flour
- 2 tbsp cornmeal
- 1½ tsp baking powder
- Salt and pepper
- 2 tsp Tajín
- 1 tsp garlic powder
- 1 cup half and half
- 2 eggs
- Cotija cheese, crumbled (for topping)
- Frying oil
Steps:
- Combine everything except half and half, eggs, and crumbled cotija.
- Beat eggs, then add to mixture with half and half.
- Form patties then fry in oil until golden.
- Top with chili lime crema and cotija cheese crumbles.
Chili Lime Crema
Ingredients:
- ½ cup sour cream
- ½ lime, juiced and zested
- 1 tbsp cilantro
- 1 tsp chili powder
- Salt to taste
Steps:
- Whisk all ingredients together and chill.
Berty-Boy-Rita (Vodka Margarita)
Ingredients:
- 2 oz Por Osos Vodka
- 1 oz Cointreau or triple sec
- ¾ oz lime juice
- ½ oz orange juice
- Tajín (for rim)
Steps:
- Mix all liquids and shake well.
- Put Tajín on the rim of your glass and pour over ice.
