Big Mac Tacos + One Sheet English Breakfast

British rock band The Struts is in the kitchen for an English Breakfast inspired by my love of Jamie Oliver. They also teach me the right way to eat beans… and I cook up a Big Mac Taco. And of course I make them sing. And it’s totally worth it.

Big Mac Tacos

Ingredients:

  • 1 lb ground beef
  • 8–10 mini tortillas
  • 10 slices cheddar cheese
  • 1 cup chopped lettuce
  • 1 cup pickles
  • Salt
  • EVOO
  • 1 cup mayonnaise
  • 3 tbsp ketchup
  • 1 tbsp Dijon mustard
  • 2 tbsp diced yellow onion
  • 1 tbsp chopped relish
  • 1 tbsp white vinegar
  • 1 tbsp garlic powder
  • 1 tsp black pepper
  • 1 tsp smoked paprika

Steps:

  1. Combine mayo, ketchup, Dijon, onion, salt, relish, vinegar, garlic powder, pepper, and smoked paprika to make Big Mac sauce. Chill 30+ minutes.
  2. Heat oil in pan. Add 2–3 tbsp ground beef to each tortilla and press flat. Season with salt.
  3. Place meat-side down on skillet over medium-low heat and cook 4 minutes. Flip to crisp tortillas.
  4. Top with cheese, lettuce, pickles, and Big Mac sauce.

One Sheet English Breakfast

Ingredients:

  • Potatoes (cut into chunks)
  • Salt and pepper
  • Chorizo
  • Red pepper
  • Cherry tomatoes
  • Eggs
  • Mushrooms
  • Parsley, chopped
  • Bacon
  • Roma tomatoes
  • Sausage
  • Shredded cheese
  • Beans
  • Sourdough bread

Steps:

  1. Preheat oven to 350°F. Parboil potatoes in salted water for 5–6 minutes, drain and steam dry.
  2. Scatter chorizo, chopped bacon, potatoes, and tomatoes on a baking sheet. Bake until potatoes are tender.
  3. Add eggs and return to oven until cooked to preference.
  4. Heat beans on stove and serve over toasted, chopped sourdough.
