Toad in the Hole and Mustard Greens

To celebrate their new seasons, I’m baking up toad in the hole and buttery mustard greens while we talk showbiz, bad breakups, and Kendrick vs. Drake vs. Cole.

Toad in the Hole

Ingredients:

  • Sunflower oil
  • 4 large sausages
  • 4 sprigs fresh rosemary
  • 1 large red onion, sliced
  • 2 garlic cloves, sliced
  • Butter
  • 6 tbsp balsamic vinegar
  • 1 tbsp vegetable stock
  • 1¼ cups milk
  • 1 cup flour
  • Salt
  • 3 eggs

Steps:

  1. Preheat oven to 475°F. Whisk milk, flour, salt, and eggs to make batter.
  2. Pour sunflower oil into baking pan and heat. Add sausages, cook until golden.
  3. Pour batter over sausages with rosemary. Bake ~20 minutes until golden.
  4. Sauté onion and garlic in butter. Add balsamic vinegar and stock. Simmer.

Mustard Greens

Ingredients:

  • ½ cup sliced sweet onion
  • 1 tbsp EVOO
  • 2 cloves garlic, minced
  • 1 lb mustard greens
  • 2–3 tbsp chicken broth
  • ¼ tsp sesame oil
  • Salt and pepper

Steps:

  1. Sauté onions in EVOO. Add garlic, cook until fragrant.
  2. Add greens and broth. Cook until just wilted. Finish with sesame oil, salt, and pepper.
