Pretzel Pot Pie
Ingredients:
- 2 tbsp unsalted butter
- 1 medium yellow onion, chopped
- 3 medium carrots, chopped
- 2 stalks celery, chopped
- ¼ cup all-purpose flour
- 2½ cups chicken broth
- Kosher salt
- 2 cups shredded cooked chicken
- ½ cup frozen peas, thawed and drained
- 2 tbsp chopped fresh parsley
- ½ cup baking soda
- 1½ pounds refrigerated pizza dough (room temp)
- 1 large egg
- ½ tsp pretzel salt
- Pie crust
Steps:
- Preheat oven to 350°F. Place pie crust into a pie pan.
- Melt butter in pan and add onion. Stir in celery and carrots. Add flour and stir to coat vegetables.
- Add broth, salt, and pepper. Simmer until thick.
- Stir in chicken, peas, and parsley, then transfer mixture to pie pan.
- In a pot, combine 8 cups water, baking soda, and 2 tsp kosher salt. Bring to a boil.
- Form pretzels from pizza dough. Boil for 30 seconds, flip, and cook another 30 seconds.
- Arrange pretzels on top of the pie mixture.
- Whisk egg with 1 tbsp water, brush over pretzels, and sprinkle with pretzel salt.
- Bake for 45 minutes, until golden brown.
