Nashville Hot Chicken, Pimento Mac & Moon Pies

Mark and Big Jay stop by the Nashville kitchen for hot chicken and hot takes on parenting, comedy, and whatever the hell is going on with Diddy.

Nashville Hot Chicken

Ingredients:

  • 4 bone-in chicken thighs
  • 1 cup buttermilk
  • 1 cup flour
  • 1 tbsp paprika
  • 1 tbsp cayenne pepper
  • 1 tsp garlic powder
  • 1 tsp salt
  • Vegetable oil (for frying)
  • Pickles and white bread (for serving)

Steps:

  1. Marinate chicken in buttermilk 4+ hours. Mix flour and seasonings in bowl.
  2. Dredge chicken in flour mix. Fry in oil at 350°F for ~12–14 minutes until internal temp hits 165°F.

Pimento Mac & Cheese

Ingredients:

  • 2 cups elbow macaroni
  • 2 cups cheddar cheese
  • ½ cup cream cheese
  • ½ cup milk
  • 1 jar pimentos, drained
  • ½ tsp garlic powder
  • Salt and pepper

Steps:

  1. Boil pasta and drain. Heat milk and cheeses until smooth. Stir in pimentos and seasonings.
  2. Combine cheese sauce with pasta and serve warm.

Moon Pie Ice Cream Sandwiches

Ingredients:

  • 4 Moon Pies
  • 1 pint vanilla ice cream
  • Sprinkles or chocolate chips (optional)

Steps:

  1. Slice Moon Pies in half horizontally. Add scoop of ice cream and press into sandwich.
  2. Mexican-Style Dumplings

    Ingredients:

    • 12 oz ground beef
    • 1 cup chopped sweet bell pepper
    • 1 cup chopped onion
    • 2 garlic cloves, minced
    • 2 tbsp chili paste
    • 2 cups shredded Mexican cheese
    • 1 pack taco seasoning
    • 1 tsp cumin
    • 1 tbsp chili powder
    • Salt & pepper to taste
    • 1 egg
    • ½ cup water
    • 2 tbsp EVOO

    Steps:

    1. Cook garlic in oil, add chili paste, onions, peppers. Add beef and seasonings. Cook until done.
    2. Cool, stir in cheese and egg. Fill dumpling wrappers, seal, and fry. Steam to finish.

Veggie Spring Rolls

Ingredients:

  • 2 oz rice noodles
  • 1 tsp sesame oil
  • ¼ tsp sea salt
  • 1 cup butter lettuce
  • 1 cup sliced cabbage
  • 2 carrots, sliced
  • 2 cucumbers, sliced
  • 2 jalapeños, sliced
  • ¼ cup green onions
  • ¼ cup cilantro
  • ¼ cup mint, chopped
  • 8 sheets rice paper

Steps:

  1. Cook and rinse noodles. Toss with sesame oil and salt. Prep all veggies and herbs.
  2. Soak rice paper, fill with noodles, lettuce, veggies, and herbs. Roll tightly.

Peanut Dipping Sauce

Ingredients:

  • ⅓ cup peanut butter
  • 2 tbsp rice vinegar
  • 2 tbsp soy sauce
  • 2 tbsp maple syrup
  • 1 tbsp sesame oil
  • 2 garlic cloves
  • 2–3 tbsp water (as needed)

Steps:

  1. Mix all ingredients. Add water gradually until desired dipping consistency is reached.
