Homemade Ricotta with Grilled Vegetables

Ingredients:

  • 8 cups whole milk
  • 1 tsp salt
  • 4 tbsp lemon juice
  • Assorted vegetables: yellow squash, onions, zucchini, garlic, sweet peppers
  • Olive oil
  • Balsamic vinegar

Steps:

  1. Line colander with cheesecloth. Heat milk with salt until nearly boiling. Add lemon juice and stir to curdle.
  2. Ladle curds into cloth to drain. Grill veggies. Plate with ricotta, drizzle with oil and vinegar.

Seafood Grill

Ingredients:

  • Mussels, shrimp, salmon, branzino, sea bream
  • Cherry tomatoes, lemons, garlic, butter, herbs

Steps:

  1. Season seafood with herbs, zest, and oil. Add to tray with tomatoes, garlic, and butter. Broil for 6 minutes.
