Fish in a Bag and Dirty Rice

Fish in a Bag
Ingredients:
- 2 6-oz pieces white fish (e.g. cod or tilapia)
- ½ red bell pepper, thinly sliced
- 1 small zucchini, sliced
- 1 lemon, thinly sliced
- 2 tbsp olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh dill or parsley (optional)
- Parchment paper
Steps:
- Preheat oven to 400°F. Cut parchment into large heart-shaped pieces.
- Layer veggies, lemon, garlic, and fish in center. Drizzle with olive oil and season.
- Fold and crimp parchment tightly. Bake for 12–15 minutes until packets puff.
Dirty Rice
Ingredients:
- 1 tbsp oil
- ½ lb ground beef or pork
- ¼ lb chicken livers, finely chopped
- ½ cup onion, diced
- ½ cup celery, diced
- ½ cup green bell pepper, diced
- 2 garlic cloves, minced
- 1 cup long grain white rice, cooked
- 1 tsp Cajun seasoning
- Salt and pepper
- ½ cup green onions, sliced
Steps:
- Brown ground meat and livers in oil. Add onion, celery, and bell pepper. Cook until soft.
- Add garlic and Cajun seasoning. Stir in cooked rice. Adjust seasoning and top with green onions.
