Fish in a Bag and Dirty Rice

We wrap fish in parchment and throw it in the oven while discussing ayahuasca, sobriety, and the wildest touring stories I’ve ever heard.

Fish in a Bag

Ingredients:

  • 2 6-oz pieces white fish (e.g. cod or tilapia)
  • ½ red bell pepper, thinly sliced
  • 1 small zucchini, sliced
  • 1 lemon, thinly sliced
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh dill or parsley (optional)
  • Parchment paper

Steps:

  1. Preheat oven to 400°F. Cut parchment into large heart-shaped pieces.
  2. Layer veggies, lemon, garlic, and fish in center. Drizzle with olive oil and season.
  3. Fold and crimp parchment tightly. Bake for 12–15 minutes until packets puff.

Dirty Rice

Ingredients:

  • 1 tbsp oil
  • ½ lb ground beef or pork
  • ¼ lb chicken livers, finely chopped
  • ½ cup onion, diced
  • ½ cup celery, diced
  • ½ cup green bell pepper, diced
  • 2 garlic cloves, minced
  • 1 cup long grain white rice, cooked
  • 1 tsp Cajun seasoning
  • Salt and pepper
  • ½ cup green onions, sliced

Steps:

  1. Brown ground meat and livers in oil. Add onion, celery, and bell pepper. Cook until soft.
  2. Add garlic and Cajun seasoning. Stir in cooked rice. Adjust seasoning and top with green onions.
