Dumpling Party and Veggie Spring Rolls

Pro-Skateboarders Chris Cole and P-Rod stop by the kitchen while I make a cultural mashup of dumplings inspired by Philly, Mexico, and Asia. We talk skating, Paul’s dad, and the art of the potsticker.
Pork Dumplings
Ingredients:
- 1 cup lean pork, minced
- 2 spring onions, sliced
- 1⅓ cups Chinese cabbage, shredded
- 1 tbsp sesame oil
- 3 tbsp rice wine
- 6 tbsp soy sauce
- White pepper
- Ginger, grated
- 4 garlic cloves, grated
- Gyoza wrappers
- Corn flour
- Vegetable oil
- 1 tsp chili oil
- 1 tbsp sesame seeds
Steps:
- Mix pork, cabbage, sesame oil, 1 tbsp rice wine, 2 tbsp soy sauce, onions, garlic, and ginger. Season with white pepper.
- Dust gyoza wrappers with corn flour. Add 1 tsp pork filling to each, seal with water.
- Pan-fry in oil for 2 minutes. Add 1 cm water, cover, and steam for 6–8 minutes.
- Make dipping sauce with 2 tbsp rice wine, 4 tbsp soy sauce, and chili oil.
Philly Cheesesteak Dumplings
Ingredients:
- 1 lb beef steak, thinly sliced
- 1 green pepper, chopped
- ½ large onion, chopped
- 1 tsp mustard
- ½ tsp Worcestershire sauce
- Salt & black pepper
- ½ lb sliced provolone or American cheese
- Dumpling wrappers
- Cheese Whiz
- Vegetable oil
Steps:
- Mix frozen-sliced steak with veggies, mustard, Worcestershire, salt and pepper.
- Place mix and cheese into wrappers. Seal and fry. Add ½ cup water and steam to finish.
Mexican-Style Dumplings
Ingredients:
- 12 oz ground beef
- 1 cup chopped sweet bell pepper
- 1 cup chopped onion
- 2 garlic cloves, minced
- 2 tbsp chili paste
- 2 cups shredded Mexican cheese
- 1 pack taco seasoning
- 1 tsp cumin
- 1 tbsp chili powder
- Salt & pepper to taste
- 1 egg
- ½ cup water
- 2 tbsp EVOO
Steps:
- Cook garlic in oil, add chili paste, onions, peppers. Add beef and seasonings. Cook until done.
- Cool, stir in cheese and egg. Fill dumpling wrappers, seal, and fry. Steam to finish.
Veggie Spring Rolls
Ingredients:
- 2 oz rice noodles
- 1 tsp sesame oil
- ¼ tsp sea salt
- 1 cup butter lettuce
- 1 cup sliced cabbage
- 2 carrots, sliced
- 2 cucumbers, sliced
- 2 jalapeños, sliced
- ¼ cup green onions
- ¼ cup cilantro
- ¼ cup mint, chopped
- 8 sheets rice paper
Steps:
- Cook and rinse noodles. Toss with sesame oil and salt. Prep all veggies and herbs.
- Soak rice paper, fill with noodles, lettuce, veggies, and herbs. Roll tightly.
Peanut Dipping Sauce
Ingredients:
- ⅓ cup peanut butter
- 2 tbsp rice vinegar
- 2 tbsp soy sauce
- 2 tbsp maple syrup
- 1 tbsp sesame oil
- 2 garlic cloves
- 2–3 tbsp water (as needed)
Steps:
- Mix all ingredients. Add water gradually until desired dipping consistency is reached.
