Al’s Breakfast Tacos & Corned Beef Hash

A couple of my comedy heroes stop by to talk The State, sketch comedy, and why a homemade tortilla makes or breaks a breakfast taco. Plus we talk Hot Frosty and fry up some corned beef hash.
Breakfast Tacos & Tortillas
Ingredients:
- Cheddar, cotija cheese
- Eggs
- Pico de gallo, sour cream, avocado
- Chorizo, jalapeños, brisket, pulled pork
- 3 cups flour, 1 tsp salt, 1 tsp baking powder
- 1/3 cup olive oil, 1 cup warm water
Steps:
- Make tortilla dough with dry and wet ingredients, knead, form balls, press and cook.
- Cook chorizo and eggs. Fill tortillas with toppings of choice.
Corned Beef Hash
Ingredients:
- 2–3 tbsp unsalted butter
- 1 medium onion
- 2–3 cups cooked corned beef
- 2–3 cups cooked chopped potatoes
- Salt, pepper, parsley
Steps:
- Sauté onions in butter. Add beef and potatoes. Cook undisturbed to crisp. Season and garnish.
