Zucchini Pesto Pasta w/ Balsamic Mushrooms

Balsamic Mushrooms
Ingredients:
- Balsamic Vinaigrette
- Melted Ghee
- Minced Garlic
- Chopped Fresh Thyme
- Sea Salt
- Black Pepper
- Whole Baby Portabella Mushrooms
Steps:
- Combine balsamic vinaigrette, ghee, garlic, thyme, salt, pepper.
- Add mushrooms and toss until coated.
- Place mushrooms on baking sheet.
- Roast at 400° for 15-20 min.
Zucchini Pesto Pasta
Ingredients:
- Whole Zucchinis
- Pesto
- Sliced Red Onion
- Sliced Mushrooms
- Cherry Tomatos
- Minced Garlic
- Olive Oil
- Salt
- Black Pepper
- Crushed Red Pepper
Steps:
- Sauté garlic, onions, and mushrooms in oil until tender; set aside.
- Spiralize zucchini to make noodles.
- Heat pesto in pan.
- Add spiralized zucchini and sauté 3-5 min.
- Add the sauteed mushrooms/onions and cherry tomatos.
- Toss frequently; season with salt and pepper.
