Vegan Chilaquiles Two Ways

Tomatillo Sauce
Ingredients:
- Tomatillos
- Onions
- Garlic cloves
- Jalapeños
Steps:
- De-husk and boil tomatillos for 15 minutes.
- Char jalapeños, onions, and garlic on stovetop.
- Combine everything in a blender and blend until smooth.
- Season with salt and pepper to taste.
Vegan Chilaquiles
Ingredients:
- Liquid plant-based eggs (Just Egg)
- Tortilla chips (the thicker the better)
- El Pato sauce (27 oz, yellow can)
- Tomatillo sauce
- Non-dairy shredded mozzarella
- Non-dairy feta crumbles (Follow Your Heart)
- Black salt
- Oil
Steps:
- Heat oil in two pans. Add chips to each, coating evenly.
- Pour liquid eggs over chips in both pans and toss to coat.
- Sprinkle black salt over both pans; mix to season well.
- In one pan, cover chips with El Pato sauce and mix to coat.
- In the other, cover with tomatillo sauce and mix to coat.
- Add mozzarella and let melt.
- Plate and sprinkle with feta crumbles before serving.
