Power couple Gabby Reece and Laird Hamilton stop by the kitchen to talk surfing, wellness, and podcast favorites. Bert celebrates Laird’s Hawaiian roots with a tropical lineup: poke bowls, Spam musubi, and Hawaiian shaved ice. Secrets are spilled. Soy sauce is, too.

Ahi Poke

Ingredients:

  • Fresh cubed Ahi
  • Sticky rice (cooked)
  • Sea salt
  • Fresh minced ginger
  • Shoyu (or Soy Sauce)
  • Oyster Sauce
  • Sesame Oil
  • Sambal
  • Diced onions
  • Chopped scallions
  • Sesame seeds

Steps:

  1. Cut ahi into cubes and mix with sea salt. Let cure for 5 minutes.
  2. Add ginger, shoyu, oyster sauce, sesame oil, and sambal. Mix thoroughly.
  3. Add diced onions, scallions, and sesame seeds. Stir and chill for at least 30 minutes.
  4. Serve over sticky rice. Top with mango, avocado, cucumber, or other favorites.

Spam Musubi

Ingredients:

  • Sticky rice (cooked)
  • 1 can Spam
  • Sushi nori sheets
  • Furikake
  • Teriyaki sauce
  • Dark brown sugar
  • Soy sauce
  • Mirin
  • Sesame oil

Steps:

  1. Whisk teriyaki sauce, brown sugar, soy sauce, mirin, and sesame oil. Microwave 30–60 seconds to dissolve sugar.
  2. Slice Spam lengthwise. Cook in skillet for 4–5 minutes per side until browned.
  3. Spoon sauce on top of Spam slices. Continue cooking, flipping, and saucing for another 4–6 minutes total.
  4. Lay nori sheet (rough side up) on wax paper. Spoon sticky rice on center, add cooked Spam, sprinkle with furikake.
  5. Roll tightly. Dab edge with water to seal. Slice into servings.
