Osso Buco with Mashed Potatoes

Comedians Ms. Pat and Byron Bowers stop by the kitchen where I’m cooking a fancy Osso Buco and some Mashed Potatoes. But they end up schooling me on how to cook potatoes the right way and how to turn cocaine into crack. Plus, Ms. Pat’s a HUGE Olipop fan now!!!

Osso Buco

Ingredients:

  • Veal shanks
  • Olive oil
  • Minced garlic
  • Diced onion
  • Sliced carrots
  • Diced celery
  • Dry white wine
  • Diced tomatoes
  • Beef broth
  • Dried oregano
  • Dried thyme
  • Dried rosemary
  • Salt and black pepper

Steps:

  1. Turn Instant Pot to sauté mode.
  2. Pat shanks dry and season with salt and pepper. Brown in pot with olive oil, ~3–4 minutes per side. Remove and set aside.
  3. Sauté carrots, onion, and celery until softened. Add wine.
  4. Stir in tomatoes, broth, herbs, and seasonings. Return shanks to pot.
  5. Close lid and pressure cook on high for 45 minutes. Naturally release for 15 minutes.

Mashed Potatoes

Ingredients:

  • Small red potatoes
  • Chicken broth
  • Milk
  • Heavy whipping cream
  • Unsalted butter
  • Garlic and herb seasoning
  • Salt and black pepper
  • Fresh parsley

Steps:

  1. Cook potatoes in Instant Pot with chicken broth on high for 10 minutes. Let naturally release for 10 minutes.
  2. Mash potatoes, then fold in milk, cream, butter, seasonings, and parsley. Don’t overwork.
