Nashville Hot Chicken Fried Steak with Japanese Fluffy Cakes

Sean Evans of *Hot Ones* and Gabriel “Fluffy” Iglesias pop over to my kitchen for a very “on topic” meal of Fluffy Japanese Pancakes and Nashville Hot Chicken Fried Steak. We talk about how we spent our first “big” paychecks, the fact that I was *Hot Ones’* first celebrity guest... and Fluffy’s record-breaking show at Dodgers Stadium. Plus, Fluffy’s got a surprise for me that I absolutely didn’t see coming.
Japanese Fluffy Cakes
Ingredients:
- 1½ cups all-purpose flour
- 3 tbsp granulated sugar
- 2 tsp baking powder
- ¼ tsp baking soda
- ¾ tsp kosher salt
- 1¼ cups buttermilk (room temperature)
- 4 tbsp butter, melted
- 1 tsp vanilla extract
- 2 egg yolks
- 4 egg whites
- ¼ tsp cream of tartar
- Cooking spray
- 3” x 2.5” wide ring molds
Steps:
- In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together buttermilk, melted butter, vanilla extract, and egg yolks.
- In another bowl, beat egg whites with cream of tartar until stiff peaks form.
- Stir the buttermilk mixture into the dry ingredients until partially combined.
- Gently fold egg whites into the batter until fully combined.
- Spray molds and griddle with cooking spray. Spoon batter into molds, cover with a lid, and cook 5–8 minutes until risen and golden on the bottom.
