Homemade Pasta Trio

CMA’s 2023 New Artist of the Year, Jelly Roll, and his equally impressive wife, Bunnie, come over for a double date with me and LeeAnn. I’m making some sexy homemade pasta with a trio of sauces to sample – one with scallops, one with rabbit, and a vodka sauce that’s got Jelly drooling. The obnoxiously thick pasta, however, is a different story.
Homemade Pasta
Ingredients:
- Semolina flour
- Eggs
- EVOO
- Fine grain sea salt
Steps:
- Make a mound of flour on the counter; form a crater in the middle.
- Add eggs, EVOO, and salt into the crater and break up with a fork.
- Slowly incorporate flour, drizzling water as needed, until dough forms.
- Knead dough until smooth and elastic. Rest for 30 min.
- Roll out and cut into noodles. Cook in salted water until al dente.
Vodka Sauce
Ingredients:
- Olive oil
- Butter
- Minced garlic
- Diced shallot
- Salt and black pepper
- Dried oregano leaves
- Dried basil
- Red chili flakes
- San Marzano whole peeled tomatoes
- Dry white wine
- Heavy cream
- Parmesan cheese
Steps:
- Heat oil and butter; add shallots, garlic, and herbs.
- Deglaze with white wine, then add crushed tomatoes and simmer 30 min.
- Stir in heavy cream and parmesan cheese.
Scallops in Lemon Garlic Sauce
Ingredients:
- Butter
- Minced garlic
- Sea scallops
- Chopped fresh basil
- Chopped fresh parsley
- Fresh lemon juice
- Salt and pepper
Steps:
- Melt butter and cook garlic until fragrant.
- Halve large scallops, then add with herbs; cook gently.
- Add lemon juice, salt, and pepper.
Rabbit Ragu Sauce
Ingredients:
- Cooked rabbit meat
- Red wine
- Chopped tomatoes
- Diced onion
- Diced carrot
- Minced garlic
- San Marzano tomatoes
- Chicken broth
- Rosemary sprig
- Thyme sprig
- Bay leaves
- EVOO
Steps:
- Sauté onion, carrot, and garlic in EVOO.
- Add chopped and canned tomatoes, broth, herbs, and rabbit meat.
- Simmer gently until thickened and flavors are combined.
