Birria Ramen + Mexican Eggrolls

S3 E20 | Dreams Come True with Cheech and Chong | Something's Burning

I’m living out every college kid’s fantasy today – when Cheech and Chong stop by the kitchen for a little cooking and a lot of conversation. And you guessed it – we light it up. A lot. They’ve got stories to tell and I am here for them all. Plus, we chat movies, merch, and I make birria ramen.

Mexican Eggrolls

Ingredients:

  • Egg Roll Wrappers
  • Ground Beef
  • Taco Seasoning
  • Diced Green Chilies (drained)
  • Shredded Pepper Jack Cheese

Steps:

  1. Cook ground beef in a skillet.
  2. Add taco seasoning and water; allow water to evaporate.
  3. Add cheese and green chilies; allow to melt and mix together.
  4. Place a scoop of filling in one corner of the eggroll wrapper; roll and fold according to directions.
  5. Seal with water.
  6. Heat 1” of oil in large frying pan; fry eggrolls until golden brown.
  7. Drain on paper towel; serve with Southwestern Sauce.

Southwestern Sauce

Ingredients:

  • Block of cream cheese (softened)
  • Sour Cream
  • Chopped Cilantro
  • Salsa (your preferred heat)

Steps:

  1. Combine all ingredients into a bowl; mix and chill until ready to eat.
