Steak & Eggs + Waffle House Hashbrowns

Blitz Boys brunch: flattop filets with cheesy eggs and a diner-style mountain of hashbrowns loaded with onions, jalapeños, mushrooms, and a double-cheese melt. No noodles, all chaos.

Steak & Eggs

Ingredients:

  • Filet steaks
  • Eggs
  • Salt and pepper
  • Butter
  • Cheese (optional)

Steps:

  1. Season steaks with salt and pepper; cook on a hot flattop or skillet to desired doneness.
  2. Add butter to the flattop; crack eggs and cook as desired. Add cheese, salt, and pepper to taste.

Waffle House Hashbrowns (Loaded)

Ingredients:

  • Shredded russet potatoes
  • Onions, sliced
  • Jalapeños, sliced
  • Butter
  • Sliced mushrooms (and other vegetables of choice)
  • American cheese
  • Shredded cheese
  • Tomatoes, diced (optional)
  • Salt and pepper

Steps:

  1. Butter the flattop or large skillet; grill onions, mushrooms, jalapeños, and any other veggies until softened.
  2. Add shredded potatoes in an even layer. Let char and crisp on one side before flipping.
  3. Top with American and shredded cheese; cook until melted and potatoes are cooked through.
  4. Finish with diced tomatoes (if using), salt, and pepper. Serve hot.
