Fried Chicken
Ingredients:
- All‑purpose flour
- Kosher salt
- Dried thyme leaves
- Dried basil leaves
- Dried oregano leaves
- Celery salt
- Ground black pepper
- Ground yellow mustard
- Paprika
- Garlic salt
- Ground ginger
- Ground white pepper
- Buttermilk
- 1 egg, beaten
- Chicken breasts or tenders
- Neutral oil for frying (canola or peanut)
- MSG seasoning (Ajinomoto/Accent), optional
Steps:
- In a bowl, combine flour with the herbs and spices (and a pinch of MSG if using); set aside.
- Whisk together buttermilk and beaten egg until smooth.
- Add chicken to the buttermilk mixture and toss to coat. Cover and let sit.
- Heat ~3 inches of oil in a large Dutch oven to 350°F (175°C).
- Working one piece at a time, remove chicken from buttermilk, press firmly into the seasoned flour, and shake off excess.
- Carefully drop dredged pieces into hot oil. Fry in batches without overcrowding.
- Cook about 12 minutes, turning halfway, until the crust is golden brown.
- Repeat dredging and frying with remaining chicken.
- Transfer fried chicken to a baking sheet and place in the oven to ensure it’s cooked through.
