Easy Shepherd’s Pie
Ingredients:
- Potatoes, peeled & quartered
- Butter
- Salt
- Onion, chopped
- Garlic, minced
- Frozen mixed veggies (peas & carrots)
- Ground beef
- Beef broth
- Worcestershire sauce
- Seasonings to taste (pepper, herbs, etc.)
Steps:
- Place potatoes in a pot and cover with at least 1" of water. Bring to a boil, reduce to simmer, and cook until tender.
- Chop onion.
- Melt butter in a sauté pan; add onions and garlic and cook until translucent.
- Add frozen veggies; cook until tender.
- Add ground beef; cook until no longer pink. Drain excess fat.
- Stir in beef broth, Worcestershire, and seasonings to taste.
- Cook uncovered ~10 minutes, adding broth as needed to prevent drying out.
- Drain potatoes; add butter and mash. Season to taste with salt (and pepper, if desired).
- Heat oven to 400°F. Spread meat/veggie filling in the bottom of a casserole dish.
- Spread mashed potatoes over the top (create ridges with a fork for extra browning).
- Bake 30–45 minutes, until browned and bubbling. Rest briefly before serving.
