Easy Shepherd’s Pie

Ingredients:

  • Potatoes, peeled & quartered
  • Butter
  • Salt
  • Onion, chopped
  • Garlic, minced
  • Frozen mixed veggies (peas & carrots)
  • Ground beef
  • Beef broth
  • Worcestershire sauce
  • Seasonings to taste (pepper, herbs, etc.)

Steps:

  1. Place potatoes in a pot and cover with at least 1" of water. Bring to a boil, reduce to simmer, and cook until tender.
  2. Chop onion.
  3. Melt butter in a sauté pan; add onions and garlic and cook until translucent.
  4. Add frozen veggies; cook until tender.
  5. Add ground beef; cook until no longer pink. Drain excess fat.
  6. Stir in beef broth, Worcestershire, and seasonings to taste.
  7. Cook uncovered ~10 minutes, adding broth as needed to prevent drying out.
  8. Drain potatoes; add butter and mash. Season to taste with salt (and pepper, if desired).
  9. Heat oven to 400°F. Spread meat/veggie filling in the bottom of a casserole dish.
  10. Spread mashed potatoes over the top (create ridges with a fork for extra browning).
  11. Bake 30–45 minutes, until browned and bubbling. Rest briefly before serving.
