Creamed Spinach

Ingredients:

Steps:

  1. Melt butter in a Dutch oven over medium heat.
  2. Add onion, a pinch of salt, black pepper, and cayenne (if using); cook until softened.
  3. Add spinach by handfuls, stirring until wilted.
  4. Stir in garlic and cook briefly until fragrant.
  5. Add cream cheese; cook, stirring, until melted and creamy.
  6. Stir in Parmesan to combine.

Creamy Au Gratin Potatoes

Ingredients:

  • Russet potatoes, thinly sliced
  • Butter
  • Medium onion
  • Salt and black pepper
  • All‑purpose flour
  • Milk
  • Shredded cheddar cheese

Steps:

  1. Heat oven to 400°F. Butter a casserole dish.
  2. Layer half the potatoes in the dish; season with salt and pepper. Top with some sliced onion.
  3. In a saucepan, melt butter; whisk in flour and a pinch of salt to make a roux.
  4. Gradually whisk in milk, smoothing out any lumps; cook until thickened.

Steak (Filets)

Ingredients:

  • Filet steaks
  • Omaha Steak seasoning (or similar)

Steps:

  1. Sear steaks in a hot pan 2–3 minutes on the first side.
  2. Flip, season, and immediately transfer to a 300°F oven.
  3. Roast to desired doneness (about 9–11 minutes for medium‑rare). Rest before serving.
