Cheesesteaks Three Ways & Horseradish Garlic Aioli

Bert courts Pardon My Take: three flattop cheesesteaks—traditional, spicy, and a breakfast banger—hoping at least one makes the cut for their Pardon My Cheesesteaks lineup. Same ribeye base, three personalities.

Cheesesteak Base (for all versions)

Ingredients:

  • Onions
  • Mushrooms
  • Bell peppers
  • Jalapeños
  • Pepperoncini
  • Ribeye steak (partially frozen for thin slicing)
  • Neutral oil, for the flattop
  • Hoagie buns
  • Provolone cheese
  • Cheese sauce ("Cheez Whiz" style)
  • Eggs (for breakfast version)

Steps:

  1. Chop all vegetables.
  2. Heat a slick of oil on the flattop.
  3. Create veggie piles: Traditional = onions + mushrooms + bell peppers; Spicy = onions + jalapeños + pepperoncini.
  4. Slice slightly frozen ribeye into razor‑thin pieces. Lay steak over both veggie piles to cook together.
  5. For the breakfast version, cook ribeye directly on the flattop in its own zone; cook eggs to preference nearby.

Traditional Cheesesteak

Ingredients:

  • Ribeye + onion/mushroom/bell pepper pile (from base)
  • Provolone slices
  • Hoagie bun
  • Horseradish garlic aioli (see below)

Steps:

  1. When the ribeye is just cooked through, lay provolone over the pile to melt.
  2. Split hoagie; spread with horseradish garlic aioli.
  3. Scoop the cheesy steak/veg into the bun. Serve hot.

Spicy Cheesesteak

Ingredients:

  • Ribeye + onion/jalapeño/pepperoncini pile (from base)
  • Provolone slices
  • Hoagie bun
  • Cheese sauce ("Cheez Whiz" style)

Steps:

  1. Melt provolone over the spicy ribeye/veg pile.
  2. Spread cheese sauce inside a hoagie bun.
  3. Load the spicy cheesy steak into the bun. Serve.

Breakfast Cheesesteak

Ingredients:

  • Ribeye (from base)
  • Eggs, cooked to preference
  • Cheese sauce ("Cheez Whiz" style)
  • Hoagie bun

Steps:

  1. Cook ribeye and eggs on the flattop.
  2. Spread cheese sauce on the bun; pile in ribeye and eggs. Serve immediately.

Horseradish Garlic Aioli

Ingredients:

  • Sour cream
  • Mayonnaise
  • Prepared horseradish
  • Garlic, minced
  • Salt & black pepper
  • White pepper
  • Dried dill
  • Garlic powder

Steps:

  1. Combine all ingredients in a bowl and stir until smooth. Chill until ready to use.
